Mango Rice Bowl recipe

This is seriously such a fantastic and fairly quick meal that my family absolutely adores!

Ingredients:

  • 1-2 blocks of baked tofu (I love the method found here, with my only changes to press then tear the tofu into chunks instead of slicing it)
  • jasmine or brown rice, cooked (my family LOVES rice, so I usually make 2 cups dry in the rice cooker)
  • the best-ever peanut sauce (recipe found below, and is a tweak of this one)
  • 1-2 fresh mangoes, cut into cubes
  • steamed broccoli
  • chopped red cabbage

Best-ever peanut sauce recipe

  • 1 can coconut milk
  • 1/2 C vegetable broth
  • 1/4 C creamy peanut butter
  • 2 Tbl soy sauce
  • 1 1/4 Tbl thai red curry paste
  • 1 tsp grated ginger
  • 1 tsp grated garlic
  • 1 1/2 Tbl lime juice

Heat all in pan until coconut milk is fully incorporated.

Create the bowls

Layer rice, tofu, broccoli, mango, and cabbage, and drizzle generously with peanut sauce. Enjoy heartily! For a fun leftover twist, enjoy in a burrito wrap.
