Breakfast is hard for me sometimes – I need a jolt of protein in the morning, but there are many breakfast-y things I just plain don’t like. Cereal has never been for me, and I like yogurt only rarely. Most mornings, I have a big smoothie, chock-full of greens, frozen fruit and coconut milk, but sometimes, I want something different. This breakfast is yummy, filling, and super good for you.
First, you saute some kale in olive oil and garlic. Cook it until it’s bright green and not so tough.
As you’re doing that, soft boil some eggs (if you prefer over-easy, or over-medium, or hard-boiled, go for it. I really like the runny yolk on this breakfast, myself, and worked hard to perfect my soft-boiled eggs last summer). Here’s how I do it:
Fill a pan with 1″ of water. Bring to a boil. Add however many eggs you’d like to soft boil. Cover, and set the timer for 6 minutes, 30 seconds. Once the timer goes off, run cold water over the eggs for 30 seconds. De-shell-ify your eggs, and you are good to go.
Pop your eggs onto your kale, add a bit of salt and pepper to taste, and enjoy.
Last summer, I was hooked on this breakfast. I’m thinking of adding it back into my rotation, because it’s tasty, filling, and pretty healthy. Plus, I get protein and veggies first thing, which makes me feel better throughout the day. What’s YOUR favorite non-traditional breakfast?
